Here is a recipe for Roast Chicken:

Ingredients

  • 1 whole chicken (about 4 pounds)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 lemon, cut in half
  • 1 head of garlic, cut in half crosswise
  • 1 sprig of rosemary
  • 1 sprig of thyme

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Remove the giblets from the chicken and rinse the chicken inside and out. Pat the chicken dry with paper towels.
  3. Rub the chicken all over with the olive oil and season it inside and out with salt and pepper.
  4. Stuff the chicken cavity with the lemon, garlic, rosemary, and thyme.
  5. Tie the chicken legs together with kitchen twine and tuck the wings under the body.
  6. Place the chicken in a roasting pan and roast it in the oven for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  7. Let the chicken rest for 10 minutes before carving and serving.
