Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 lemon, cut in half
- 1 head of garlic, cut in half crosswise
- 1 sprig of rosemary
- 1 sprig of thyme
Instructions
- Preheat the oven to 425°F (218°C).
- Remove the giblets from the chicken and rinse the chicken inside and out. Pat the chicken dry with paper towels.
