Ingredients
- 4 fillets of white fish (like cod or tilapia), skin removed
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- juice of 1 lemon
- salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced zucchini, yellow squash, red bell pepper, and onion with 1 tablespoon of the olive oil and salt and pepper to taste. Spread the vegetables on a baking sheet and roast in the oven for 15-20 minutes, or until tender.
- While the vegetables are roasting, season the fish fillets with salt and pepper.
- In a small bowl, mix together the garlic, basil, parsley, lemon juice, and remaining 1 tablespoon of olive oil.
- When the vegetables are done roasting, remove them from the oven and place the fish fillets on top of the vegetables. Drizzle the herb-lemon mixture over the fish.
- Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
